Description

Finagro is a family owned estate of 450 acres of coffee trees divided into 2 farms (Ascona and Helgoland). Founded in 1926, the Vohora family has been cultivating and managing the estate for three generations. The farms are located at the end of the Ngorongoro Crater, in the Arusha region, Tanzania.

Carbonic maceration is a term taken from wine production, but it is also used for the fermentation of this coffee. The coffee cherries are first siphoned off to remove the “floaters” which have a too low density, the remaining cherries are then put into a large sealed barrel with cool water. The barrel is fitted with a one-way valve for degassing: the environment where the beans ferment will not have any new oxygen (this makes the environment "carbonic"). For coffee, this fermentation environment limits the number of microbes and obviously changes the type of fermentation.

The Batian variety is a large variety of coffee cherries with a very good flavor profile and a good yield when grown in height. The Batian variety from the Finagro estate offers a cup with many fruity notes (Currant, citrus, wild berries, stone fruit) and some sweet notes (dark chocolate and caramel) which make it a rounded coffee.
