Coming from our private import program, this grain is from the Santa Felisa group in Guatemala.
Sold only by invitation auction, the Santa Felisa lots are recognized around the world following the obtaining of several recognition awards at the Cup of Excellence. We were able to get our hands on one of their best lots of 2020.
It is a Red Catuai from El Paraxaj Farm, Chimaltenango District, which has been named Honey Moon to represent its aromatic profile. It is indeed a real honeymoon that gives this coffee which has been pulped, and fermented anaerobically (without oxygen) with fermentation in yeast of the "Saccharomyces cerevisiae" type, traditionally used as brewer's yeast. The grains are then dried for 8 days.
The result is an exceedingly clean and bright coffee with aromas of peach and almond combined with the sweetness of honey.
