Coffee Roasting: Best Practices focuses solely on advanced techniques for developing and controlling roasting curves, with many pages devoted to strategies for avoiding accidents and "ROR" cops, baked coffee, unnecessary roasting and other roasting defects. This book sets the standard for third wave coffee roasting methodology.
